Copper with Tin Lining

The use of tin-lined copper in kitchen utensils dates back millennia, and even though cooking options now abound, it remains the favorite choice of Chefs worldwide:

• Copper’s unparalleled heat conductivity guarantees quick, even cooking and energy savings
• Copper is 100% recyclable, and extremely resistant to bacteria and corrosion
• Tin is a great conductor itself: it doesn't interfere with the cooking performance of copper cookware, it is naturally low-stick and nickel-free
• When applied by hand over an open flame – as our master craftsmen do – tin bonds to the copper, ensuring your cookware a very long life when properly cared for

Tin-lining is arguably the best surface to cook on, but it may not be for everyone. Care should be taken to avoid scratching it with metal tools, the temperature must never exceed 430˚F (220˚C) and, after years of faithful service, tin-lined cookware will require retinning.

  • At 392Wm°K copper’s heat conductivity is the highest among non-noble metals: almost twice that of aluminum (225°) and way superior to stainless steel (16°). This makes your copper cookware a precision tool. When placed on a flame, it will spread heat quickly and consistently across the bottom and up the sides whilst, when removed from the heat source, the temperature will drop quickly, avoiding overcooking.
  • Being 100% recyclable, copper is the most sustainable option in the kitchen. It is estimated that 80% of all the copper ever extracted is still in use in some form today!
  • Copper’s natural oxidation makes it extremely resistant to bacteria and corrosion in a natural way - and results in the rich patina that many copper connoisseurs love and cherish.
  • Tin’s smooth crystalline structure makes it naturally low-stick: a small amount of oil or butter, combined with the right cooking temperature, is enough to release cooked foods from tin effortlessly.
  • Not all copper needs tin! Some items with specific uses are manufactured and sold without any interior lining: melting sugar into caramel, whisking egg white , making jams and preserves are all techniques that not only can be safely done in pure unlined copper, but in fact should!

Stainless steel lined copper cookware has become increasingly popular over the years, and it is not hard to see why:

• Copper’s heat conductivity guarantees quick, even cooking, and energy savings
• Copper is 100% recyclable, and extremely resistant to bacteria and corrosion
• Stainless steel is practical, scratch-resistant and easy-to-clean – ideal for everyday use
• Unlike tin, stainless steel will never require retinning, even after years of cooking
• Stainless steel’s maximum temperature (500˚F / 260˚C) is higher than tin’s. This makes it more forgiving of higher temperature sears, cooking accidents and distraction!

Stainless steel lining is a great option for all the home chefs who care about practicality of use and care. However, for those requiring the finest temperature control, our tin lined copper may still be the best solution.
