This pot is beyond words fantastic. I first started off with making a tomato sauce, and when it was reducing, there were bubbles everywhere throughout the entire bottom of the pan, showing the heat was evenly distributed. There are ZERO hot spots; the heat is the exact same everywhere in the pot. Since copper retains the heat so well, you're able to use significantly lower temperatures because all the heat goes directly into the pot, instead of most of the heat being lost like in SS cookware. The inside of this pot is highly polished stainless steel, so it resembles the traditional look of tin lined cookware, without having to undergo all the maintenance tin entails. Also, that makes nothing stick to this pot, because since it is so polished there is no rough edges for food to stick to. The appearance is a bit hard to tell from the stock pictures offered, but let me tell you, it is drop dead gorgeous. The hammered copper is remarkable, and it makes you feel like you're cooking in a Tuscan villa in Italy with a pot made by an old copper-smith in the mountains. Please, do yourself a favor and purchase this. You will not regret it.
