    Ideal for baking and serving fruit crumble or presenting sweet treats during tea time, this charming piece is just as useful in everyday cooking – roasting vegetables, baking a delicious pasta gratin for two, or serving sides and appetizers in style.

    Crafted in solid copper for superior heat conductivity, hammered for increased strength and lasting beauty, and tin-lined by hand over fire – so naturally low-stick. The riveted handles are cast in solid bronze, and the lid is crowned by a lotus-shaped bronze knob.

    Taking care of your Ruffoni the right way

    Cooking

    Recommended for use on gas stovetops, open flames (wood, charcoal, barbecue) and in the oven - electric cooktops also possible.

    Never heat the pot empty and do not exceed 220 C (430 F). Bronze handles will get hot: always use pot holders while cooking.

    Use wood or plastic tools to avoid scratching the tin lining.

    Washing and Polishing

    Hand-wash with a soft sponge and mild detergent, and dry immediately with a soft cloth.

    With use, copper develops a rich patina over time that many love and cherish. To restore a polished shine, use a good copper polish (like Ruffoni Cleaner) or salt with lemon juice/vinegar.

    Tin Care

    Tin will naturally discolor over time, but remain equally effective. Depending on use, the tin lining may eventually wear off and require retinning. Prolong the tin lining's life by not scratching it with metal tools, never overheating the cookware, and limiting the use of acidic ingredients.

    Can I put tin-lined copper cookware in the oven?

    Yes, tin-lined copper cookware is oven safe and ideal for oven use at temperatures up to 430°F (220°C).

    Does copper cookware heat evenly?

    Yes, copper is one of the best heat conductors available, spreading heat evenly across the entire cooking surface.

    How can I remove copper tarnish?

    With use, copper naturally develops a rich patina that many love and cherish. To restore a polished shine, there are excellent commercial copper cleaners available in the US – we especially recommend Kleen King Powder and Wright’s Copper Cream. If you prefer a natural approach you can also try a trusted nonna’s remedy: mix fine salt with an acidic ingredient such as lemon juice or vinegar, gently rub it over the tarnished copper surface, then rinse thoroughly and dry well.     Why is tin used to line copper cookware?

    Tin is naturally non-reactive and non-toxic, and it provides a smooth cooking surface while preserving copper’s superior heat conductivity – making it the natural match for copper for millennia.

    Can I cook acidic foods like tomatoes or lemon in copper cookware?

    Yes, as long as the copper cookware is properly lined with stainless steel or tin. The lining prevents direct contact between acidic ingredients and copper, making it safe to cook foods such as tomatoes, citrus, wine-based sauces, and other acidic preparations.

    If the cookware is tin-lined (Historia collection), occasional use of acidic ingredients is perfectly safe. For frequent cooking with highly acidic foods, however, we recommend stainless steel–lined copper (Opus Cupra collection), as prolonged exposure may gradually shorten the lifespan of the tin lining – for example, daily boiling of water with lemon is not recommended.
