Mixed Berry Sauce with Star Anise and Cardamom

Ingredients
2 cups / 300 gr frozen mixed berries
1/2 cup / 120 ml water
1/4 cup / 50 gr granulated sugar
2 star anise stars
2 cardamom pods, crushed
Pinch of salt
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 tablespoon cornstarch
Instructions
In a Saucepan, add the frozen berries, water, sugar, star anise, crushed cardamom, salt, and stir to combine.
Bring the mixture to a gentle simmer over medium heat, stirring occasionally, for about 10-15 minutes.
While the berries cook, in a small bowl mix the cornstarch with the lemon juice to create a slurry. Gradually add the slurry to the berry mixture, stirring continuously to avoid lumps.
Continue cooking the sauce over medium heat, stirring frequently, until it thickens to your desired consistency. This should take about 3-5 minutes.
Add the vanilla extract and a pinch of salt, stirring to combine.
Once the sauce has thickened and the flavors have melded, remove the star anise and cardamom pods from the Saucepan.
Serve the warm berry sauce over French toasts, pancakes, waffles, yogurt or ice cream!
