    Getting the most out of your Ruffoni Fry Pan

    A good fry pan allows you to sauté vegetables, sear meats and shallow-fry almost any kind of ingredient. Constructed of solid copper or highly conductive clad stainless steel, Ruffoni fry pans are also well suited to cook delicate foods.

    Our fry pan is a practical and versatile kitchen ally that you will find yourself using at different times of the day for the most different recipes. Let the children wake up to the smell of freshly made pancakes for a sweet Sunday treat, and fry some eggs for the grown-ups. Come lunch time, use to sauté all kind of veggies, then sear and pan fry chicken breast or cod fillets and fries for a quick and delicious dinner.

    For even more flexibility, pick a fry pan with lid: wilt spinach and other leafy greens in their own water, then finish open, with a splash of cream and freshly cracked black pepper. Gently roast peppers, onions, tomatoes and spices for a deliciously caramelized shakshuka, then crack in some eggs and cover with the lid to firm up the whites.

    Our serving shape, with two side handles, is especially designed to sit at the center of a crowded table and serve piping-hot food in style. Or pick a frying pan with the traditional long stick handle and hang it on display, so it adorns your kitchen and is always within reach.

    Use tip: remember that copper cookware never needs to be pre-heated, and always use a bit of oil or butter to prevent sticking.

    Taking care of your Ruffoni the right way

    Cooking

    Recommended for use on gas stovetops, open flames (wood, charcoal, barbecue) and in the oven - electric cooktops also possible.

    Never heat the pot empty and do not exceed 220 C (430 F). Bronze handles will get hot: always use pot holders while cooking.

    Use wood or plastic tools to avoid scratching the tin lining.

    Washing and Polishing

    Hand-wash with a soft sponge and mild detergent, and dry immediately with a soft cloth.

    With use, copper develops a rich patina over time that many love and cherish. To restore a polished shine, use a good copper polish (like Ruffoni Cleaner) or salt with lemon juice/vinegar.

    Tin Care

    Tin will naturally discolor over time, but remain equally effective. Depending on use, the tin lining may eventually wear off and require retinning. Prolong the tin lining's life by not scratching it with metal tools, never overheating the cookware, and limiting the use of acidic ingredients.

    I don’t want to cook on non-stick cookware, where can I fry eggs?

    You can fry eggs without non-stick cookware by using tin-lined copper or stainless steel lined cookware. Both work beautifully if you follow a few simple steps:

    • add a small amount of fat of your choice (such as butter or oil)
    • place the pan over medium heat, and allow it to warm up gently before adding the eggs
    • cook at a moderate temperature rather than high heat

    Proper heat control combined with fat creates a natural low-stick effect, allowing eggs to release easily while developing better flavor and texture than traditional non-stick surfaces

    What is a frying pan used for?

    Frying pans are used for searing, frying, browning, and quickly cooking foods over direct heat.

    How long does tin lining last?

    The lifespan of a tin lining varies depending on frequency of use, cooking temperatures, and the types of food prepared. It can be significantly shortened by misuse – even in a single instance – such as overheating, boiling dry, or scratching the surface. When proper use and care instructions are followed, tin linings in well-loved pans often last 10 to 20 years with regular home use before needing to be re-tinned.

    Does Ruffoni re-tin cookware?

    We do offer a re-tinning service for our cookware. However, for customers in the United States, we have found that using a trusted local re-tinning service is faster and more cost-effective, as it avoids international shipping and customs clearance.

    Luckily, many tried-and-tested local options exist. We especially recommend Rocky Mountain Retinning – when contacting them, mention that you have Ruffoni cookware in need of re-tinning to receive a 15% discount.

    Can copper cookware go in the dishwasher?

    No, copper cookware should not be washed in the dishwasher. Harsh detergents and prolonged exposure to moisture can tarnish copper surfaces, damage tin linings and silver finials, dull the shine of your pots and pans, and cause corrosion along the rims.

    Always wash copper cookware by hand, inside and out, using warm water, mild dish soap, and a soft sponge. After washing, rinse thoroughly and dry immediately to help prevent water spots and staining.
