    Getting the most out of your Ruffoni Stockpot

    Stockpots are approximately as tall as they are wide: a clever proportion that maximizes their capacity, meaning you can cook plenty of food at once.

    Fill with water and any veggies found wondering at the back of the fridge for a light and tasty homemade vegetable stock, or add meat and bones for delicious homemade stock which can be used in any number of dishes (our favorite: risotto!). Alternatively, make a flavor base with soffritto, then layer on your favorite seasonal vegetables and simmer gently for endless soup options, nourishing and satisfying. The stockpot can also be used to gently simmer grains or prepare oatmeal for breakfast, or take a page out of all nonnas' book and mix vegetables, legumes and short pasta for a nourishing minestrone that the whole family will enjoy.

    Taking care of your Ruffoni the right way

    Cooking

    Recommended for use on gas stovetops, open flames (wood, charcoal, barbecue) and in the oven - electric cooktops also possible. Use a burner that is similar in diameter to the cookware, never heat the pot empty and do not exceed 230 C (450 F). To avoid scratching or dulling the polished surface, do not use knives, sharp kitchen tools, corrosive detergents and metal scouring pads.

    Washing and Polishing

    Hand-wash with a soft sponge and mild detergent, and dry immediately with a soft cloth.With use, copper develops a rich patina over time that many love and cherish. To restore a polished shine, use a good copper polish (like Ruffoni Cleaner) or salt with lemon juice/vinegar.

    Silver care

    The silver-plated finial will naturally tarnish over time: use a silver-polishing cloth to restore its shine, or to polish more thoroughly remove from the lid by twisting the special screw - rotate the screw, not the finial, to prevent damage to the lid. Always hand-wash as dishwasher use would accelerate the silver tarnishing.

    Why should you reserve pasta water when making pasta sauces?

    Pasta water contains starch released during cooking, which helps the sauce cling to the pasta. Adding a small amount of reserved pasta water creates a smoother, silkier sauce, improves emulsification with fats like olive oil or butter, and lets you adjust the sauce’s consistency without diluting its flavor.

    What’s the best pot for cooking pasta?

    The best pot for cooking pasta is a large stockpot that allows plenty of water to circulate freely around the pasta. A spacious pot helps prevent sticking, promotes even cooking, and lets pasta move naturally as it boils.

    Tall sides also help reduce boil-overs and make it easier to reserve starchy pasta water, an essential ingredient for creating smooth, well-emulsified sauces.

    Can copper cookware go in the dishwasher?

    No, copper cookware should not be washed in the dishwasher. Harsh detergents and prolonged exposure to moisture can tarnish copper surfaces, damage tin linings and silver finials, dull the shine of your pots and pans, and cause corrosion along the rims.

    Always wash copper cookware by hand, inside and out, using warm water, mild dish soap, and a soft sponge. After washing, rinse thoroughly and dry immediately to help prevent water spots and staining.

    How can I remove copper tarnish?

    With use, copper naturally develops a rich patina that many love and cherish. To restore a polished shine, there are excellent commercial copper cleaners available in the US – we especially recommend Kleen King Powder and Wright’s Copper Cream. If you prefer a natural approach you can also try a trusted nonna’s remedy: mix fine salt with an acidic ingredient such as lemon juice or vinegar, gently rub it over the tarnished copper surface, then rinse thoroughly and dry well.     Is it better stainless steel or tin lining?

    The choice between tin and stainless steel depends on personal preference, as both materials offer excellent cooking performance. Have a look at this comparison chart for a detailed overview.

    To summarize:

    Tin lining is a traditional, nickel-free choice. It is naturally low-stick and offers unmatched heat responsiveness. However, its maximum recommended temperature is lower than that of stainless steel, and it can be scratched by metal utensils. Please note that after many years of everyday use tin-lined cookware will eventually require re-tinning.

    • Stainless steel lining is scratch-resistant, easier to care for than traditional tin lining, and does not require re-tinning. It is slightly less heat-responsive than tin, requires more attention to prevent sticking, and is generally heavier and more expensive.
