Pasta with Black Olives, Cherry Tomatoes and Rocket – an Easy and Tasty Office Lunch

Packing lunches for the office is always a struggle. Some recipes aren’t meant to travel, others can’t be enjoyed cold – that’s why sandwiches are often the easiest solution. Pasta, however, comes to the rescue. Easy to prepare, pack and transport, a healthy pasta salad is a solid choice for the lunch box that takes minutes. Ours, specifically, takes 12 minutes – the time you need to cook it – is as delicious warm or cold, and can easily be made vegetarian: the perfect dinner that becomes lunch in the office the next day!

Farfalle with black olives, cherry tomatoes and rocket

Ingredients

  • 4 oz / 115 gr pasta

  • 1 thinly sliced garlic clove

  • 2 tbps halved black olives

  • 12 halved cherry tomatoes

  • 1 cup / 20 gr fresh rocket

  • 1/2 cup / 120 ml pasta water

  • 1 tbps extra virgin olive oil

  • kosher salt

  • black pepper

  • 1 can tuna packed in extra virgin olive oil

  • grated Parmigiano cheese

Instructions

  1. In a Stockpot with Pasta Insertcook the pasta in boiling, salted water.

  2. 6 minutes before the pasta is done, pour the olive oil into a Chef Pan and turn on a low flame.

  3. Add the sliced garlic and sauté briefly until lightly golden.

  4. Add the olives and tomatoes and cook for 2 minutes, until just lightly softened.

  5. (Optional) drain the excess olive oil from the tuna, and add it to the pan

  6. Use the Pasta Insert to strain the pasta well al-dente right into the Chef Pan without loosing the pasta water to the drain.

  7. Add 1/2 cup of pasta water to the Chef Pan and sauté until fully incorporated, 1-2 minutes

  8. Turn off the heat, toss in the rocketsprinkle with the Parmigiano cheese (only if you skipped the tuna!) and enjoy warm or cold.
