Packing lunches for the office is always a struggle. Some recipes aren’t meant to travel, others can’t be enjoyed cold – that’s why sandwiches are often the easiest solution. Pasta, however, comes to the rescue. Easy to prepare, pack and transport, a healthy pasta salad is a solid choice for the lunch box that takes minutes. Ours, specifically, takes 12 minutes – the time you need to cook it – is as delicious warm or cold, and can easily be made vegetarian: the perfect dinner that becomes lunch in the office the next day!
Pasta with Black Olives, Cherry Tomatoes and Rocket – an Easy and Tasty Office Lunch

Ingredients
4 oz / 115 gr pasta
1 thinly sliced garlic clove
2 tbps halved black olives
12 halved cherry tomatoes
1 cup / 20 gr fresh rocket
1/2 cup / 120 ml pasta water
1 tbps extra virgin olive oil
kosher salt
black pepper

1 can tuna packed in extra virgin olive oil
grated Parmigiano cheese
Instructions
In a Stockpot with Pasta Insert, cook the pasta in boiling, salted water.
6 minutes before the pasta is done, pour the olive oil into a Chef Pan and turn on a low flame.
Add the sliced garlic and sauté briefly until lightly golden.
Add the olives and tomatoes and cook for 2 minutes, until just lightly softened.
(Optional) drain the excess olive oil from the tuna, and add it to the pan
Use the Pasta Insert to strain the pasta well al-dente right into the Chef Pan without loosing the pasta water to the drain.
Add 1/2 cup of pasta water to the Chef Pan and sauté until fully incorporated, 1-2 minutes
Turn off the heat, toss in the rocket, sprinkle with the Parmigiano cheese (only if you skipped the tuna!) and enjoy warm or cold.
